Cinco De Mayo: Mexican Street Corn Recipe (Elotes)

Hello Lovelies!

Today we are celebrating the upcoming Cinco De Mayo festivities! I’m showing you how to make Mexican street corn also known as Elotes in Spanish. This recipe is super simple and will have you licking your fingers tips.

Here’s what you’ll need.

Mexican Food Recipes - Mexican Street Corn


1. Ears of Corn—I always assume one to two per person

2. Mexican Crema  (Popular brand: Cacique Crema Mexicana)

3. Mexican Cotija Cheese  (Popular brand: Cacique Cojita Cheese)

4. Smoked Paprika

5. Lime


1. Preheat oven to 350 degrees

2. Place corn directly onto oven rack. Roast for 30 minutes—if using a grill put on medium-high heat and grill until kernels are charred. In other words when some kernels become black.

3. Remove from oven or grill and immediately spread Mexican crema on each cornhusk.

4. Sprinkle Cotija cheese.

Note, that both of these items (crema and cheese) can be found in the ethnic or international aisle at your local supermarket.

5. Sprinkle smoked paprika and add a fresh squeeze of lime.

6. Eat & Enjoy!
