Three Flatbread Recipes That Will Have You Grabbing Seconds and Thirds!

Hello Lovelies!

When entertaining in the summer months, I always strive to make quick, easy appetizers. Ones that will have me spending more time with my friends rather than spending time in the sweltering kitchen heat. Wouldn’t you all agree?!

So, today I’m bringing you three of my most delicious flatbread recipes. Each made in less than 15 minutes. Allowing you to play hostess in the blink of an eye! Oh, and if that weren’t enough, these are so good that I can guarantee they will have your guests happily grabbing seconds and even thirds. Don’t forget to make enough!

Side note: If you follow me on Snapchat {Endlessly Elated} you know my husband acted as my taste dummy and the oohing and ahhing was unreal. Let’s just say I have made them more than once since last Sunday!

Prepare for some finger-licking appetizers. Now without further ado, here are the recipes.

Prosciutto, Mozzarella, Onion, Egg & Truffle Oil Flatbread—My ultimate favorite!

Ingredients: (Serving Size 2-3 people)

  1. 1 Flatbread (I used Stone Fire Tandoor Baked Naan)
  2. 1 teaspoon of olive oil
  3. 2 ounces of fresh mozzarella, shredded
  4. 3 slices of prosciutto, chopped
  5. ¼ of a red onion, chopped
  6. Cooking spray
  7. 1 large egg
  8. A pinch of salt
  9. A pinch of black pepper
  10. 1-3 drops of truffle oil

 

Directions:

Utilizing a pastry brush, spread olive oil evenly onto flatbread. Then top flatbread with mozzarella, prosciutto and onions. In a preheated 400-degree oven, place flatbread onto baking rack for about 8 to 10 minutes or until cheese is melted. In the meantime, warm a nonstick skillet over medium heat. Coat with cooking spray and add a cracked egg onto the pan. After 10 to 15 seconds, jiggle the pan and ensure the egg is not sticking. Once the egg is fully set (no longer opaque in color; about 1 to 1- 1 1/2 minutes) flip onto its other side.  Cook for about 10 -15 more seconds and remove from skillet. Once time is up, remove flatbread from oven. Place onto serving platter, slide egg onto flatbread and season with a pinch of salt and pepper. Lastly and for that extra oomph, add a few drops of truffle oil and you are on your way. Cut into bite size pieces and enjoy!

Mozzarella, Peach, Basil and Honey Flatbread—Screams summer!

Ingredients: (Serving Size 2-3 people)

  1. 1 Flatbread (I used Stone Fire Tandoor Baked Naan)
  2. 1 teaspoon of olive oil
  3. 2 ounces of fresh mozzarella, shredded
  4. 1 peach, cut 3 to 4 thin slices
  5. 3-5 basil leaves, finely chopped
  6. 1-3 drops of Honey

 

Directions:

Utilizing a pastry brush, spread olive oil evenly onto flatbread. Then top flatbread with mozzarella. In a preheated 400-degree oven, place flatbread onto baking rack for about 8 to 10 minutes or until cheese is melted. Once time is up, remove flatbread from oven and add peaches and basil. Next, place flatbread back into the oven and broil on high for about 1-2 minutes. Remove flatbread, place onto serving platter and drizzle honey. Cut into bite size pieces and continue to enjoy!—Writing this is making my mouth water!

Goat Cheese, Fig, & Prosciutto Flatbread—A perfectly sweet and salty combo!

Ingredients: (Serving Size 2-3 people)

  1. 1 Flatbread (I used Stone Fire Tandoor Baked Naan)
  2. 1 teaspoon of olive oil
  3. 2 ounces of goat cheese, shredded
  4. 3 slices of prosciutto, chopped
  5. 3 fresh figs, stems trimmed and quartered

 

Directions:

Utilizing a pastry brush, spread olive oil evenly onto flatbread. Then top flatbread with goat cheese, prosciutto and figs. In a preheated 400-degree oven, place flatbread onto baking rack for about 8 to 10 minutes or until cheese is melted. Once time is up, remove flatbread from oven, place onto serving platter and cut into bite size pieces. Voilà!  A third mouth-watering recipe. I’d say enjoy but at this point go all in and indulge!
