Healthy Stuffed Red Peppers Recipe

Today, I’m sharing my stuffed red peppers recipe! If you follow me on Instagram, you know I meal prepped last week and made these. They were such a hit that I figured I’d share them with you.

Stuffed Red Peppers (4 Servings)


  • 4 red peppers (cut in half and gutted)
  • 1 package of Trader Joe’s Grilled Chicken Strips (about 12 ounces). If you want to grill your own here’s a grilled chicken recipe, I’ve used in the past.
  • 8-10 basil leaves (chopped)
  • ½ a red onion (diced)
  • 1 cup of organic marinara sauce
  • 1 cup of low fat mozzarella cheese


Cut your peppers in half and then over a burning flame directly place each red pepper onto the burner. Leave until completely charred. They should appear black in color.

Once all peppers are charred, let them cool for about 5-10 minutes or until you can handle without burning yourself. In the meantime, prep your filling.

Shred your grilled chicken using two forks and chop your basil and onions. Combine all ingredients. Then throw your filling into a skillet over medium heat until completely warm (about 5-7 minutes). At around the five-minute mark, add your marinara sauce and stir.

Now you are ready to bring it all together! Grab your cooled peppers and peel the skin. This will reveal a deep red color. Next, add filling to each pepper and top with some low fat mozzarella cheese. Put on a rack or baking dish in a 350 degree oven for about 5 minutes or until cheese is melted. Serve warm and enjoy!
