Over the weekend, my husband and I had dinner over at Eataly in the Flatiron district and if you‘re in the NY area and haven’t been it’s a must! This place is literally a “foodie” (I put this in quotes in case you’ve watched my YouTube video,wink, wink!) paradise. So being there inspired me to buy everything in sight. Yes, you can actually dine and shop there. It’s amazing!
So, during dinner I committed to shopping for just about everything and felt giddy with excitement at the thought of spending the next day in my kitchen. It is sincerely one of my favorite places so although it might sound torturous to some for me it’s truly blissful. Plus I never cook without a glass of wine in hand so maybe that’s why it’s so enjoyable! 🙂
Here’s what it boiled down to. Fresh ravioli stuffed with ricotta cheese smothered in a ground short rib meat sauce! You, of course can interchange the type of pasta or meat but I promise going with the above won’t disappoint!
For the sauce, I used this recipe. However, note that I substituted the Italian sausage and ground beef for the short rib mix and I also added additional seasoning: 1/8 teaspoon of oregano, garlic powder, and onion powder. This just gave it an extra bit of love. As for the pasta, I boiled it as you would any other kind. Nowadays, you can find fresh pasta at any local supermarket. Pretty simple!
I must say, it was phenomenal! A definite must try! I will certainly be using these ingredients and recipe for many dinner parties to come!
