Healthy Poached Eggs + Avocado Toast Recipe!

Today, I’m sharing my healthy poached eggs with avocado toast recipe! Super simple and no oil, butter, or even cooking spray is required!

  • Eggs (for each piece of toast you will need one egg)
  • Salt and Pepper
  • Wheat baguette

Here’s the simple recipe (and my secret to have the perfectly poached egg):

Preheat the oven to 350 degrees. Crack one egg into each muffin tin and add a tablespoon of water. Bake for about 11 to 13 minutes.

Using a serrated knife cut thick pieces of bread (about 1 inch thick) and place them into the toaster for about 4- 5 minutes. Once your bread is toasted, cut an avocado in half, scoop out and smear onto each piece of toast. Season with salt and pepper—just a pinch.

At this point, the poached eggs should be completely cooked. Remove eggs out of the oven and with a slotted spoon rim the edge of each muffin tin to loosen the egg. Using the same spoon, carefully pick up the egg and blot excess water with a paper towel.

Place each egg onto a piece of toast. Lastly and certainly the best part, grab your knife and fork and dig in. The yolk should be oozing out and melting with the flavors of the avocado and the toast. Enjoy your perfectly, yet super easy to make poached eggs!
